Banacocoberry Pancakes

Happy Pancake Day! An entire day celebrating cakes cooked in a pan, what a great day. Shrove Tuesday precedes the beginning of Lent, so if you're giving up chocolate (you are crazy) then you may as well make the most of pancake day by consuming as much of the thing you're giving up as you possibly can. 




My favourite pancake is a pancake smothered in Nutella, but after seeing endless posts on social media about banana pancakes that only require 1 egg and 2 bananas to create, I thought it would be great to try it out. 




My mum (who makes the best food ever) was a little sceptical when I mentioned that to make these pancakes, only two ingredients are required. So to avoid our pancakes ending up like banana omelettes, we added a few extra additions. 



I made 5 pancakes and all I used was: 



- 2 bananas

- 1 large egg
- 1tbsp of flour (this helps to bind the ingredients together to make perfectly round-shaped pancakes)
- A sprinkling of baking powder
- A sprinkling of cinnamon (if you love the taste like me)
- Blueberries (and chopped mango pieces if you like!)
- Coconut oil (to fry)
- Acacia honey to drizzle over pancakes once cooked

All you have to do is:



Mash the bananas as much as you can, mix in the beaten egg, then add the flour until the mixture is smooth. Then add a pinch of baking powder. If you're a fan of cinnamon, add this to the mix. 



Pour out the mixture into 'pancake sizes' (adding the blueberries on top is optional) onto a preheated pan with coconut oil. Coconut oil is healthier than most cooking oils, but melted butter or an oil spray is equally as good! 




Ta-dah! B-e-a-uuutiful pancakes, ready to eat.
